One of the great things about squash, is its relatively long shelf life. I've had several butternut squash anxiously sitting on my counter waiting to be used. After searching online I came across
this recipe and replaced the acorn squash with butternut. One of the unique appeals to this particular recipe, is the addition of cinnamon into this
Winter Vegetable soup. I love how this flavor profile is not normally associated with savory soups.
