One galette at a time

Do you ever have moments where you say to yourself, "what was I thinking ?" Well for me, it seconds after I saw the invasion of apples taking over my kitchen counter. Twenty six pounds what a logical amount for a family of two.......so instead of bemoaning the fact I had done this to myself I pushed up my sleeves and started peeling, chopping, mixing and rolling.

Braeburn, Ambrosia, Cortland, McIntosh, Granny Smith, Honey Crisp, and Sansa were all welcome to the party.

Between my distaste for large quantities of crust, my inability to make aforementioned crust look stellar and my love for a good presentation the solution was clear: make galettes. One crust which does not require perfection and the less uniform it looks the better.

I love to make my own applesauce, it's easy and delicious. I usually make it in a crock pot but I think you can also do it on the stove. You can make as much as you want and it uses a lot of apples!

I was a very lucky recipient of one of these delicious galettes! I'm very appreciative of the work you went to on all those apples!
