Since I have an aversion to using mayo, I never make traditional types of potato salad. This particular version taken from Martha Stewart Living April 2010 called for olive oil, parsley, dijon mustard, vinegar and goat cheese. Now this is a recipe I can handle making. I am having trouble accessing the recipe online, so you will just have to go and pick up a copy today.
